Brar’s version of lauki kofta serves two to four people and balances the mildness of bottle gourd with the richness of a spiced curd-based gravy. The preparation begins with the kofta mixture: grated lauki is seasoned with salt, squeezed to remove excess moisture, and combined with gram flour, ginger-garlic paste, fennel seeds, and chopped coriander stems.
