The magic of a tandoori dish lies in its smoky aroma, charred edges, and tender core. Yet achieving this balance isn’t simply about cooking in a clay oven- it’s about precision. Chef Brijesh Singh from Uttarakhand explains that the secret to flawless tandoori cooking rests on three pillars: controlled heat, layered marinades, and careful timing.
The first principle is slow, steady cooking. High flames may look dramatic, but they risk burning the outside while leaving the inside underdone. Gentle heat allows flavours to seep deep into the meat or paneer, ensuring juiciness and a uniform char.
Equally important is the two-stage marinade. The initial blend of ginger, garlic, lemon juice, and salt penetrates the protein, laying the foundation. The second, richer marinademade with thick yoghurt, spices, and mustard oil- forms the flavourful crust that clings during cooking. Singh emphasizes yoghurt over vinegar, as its mild acidity tenderizes without damaging delicate textures and helps spices adhere.
Time is the third ingredient. A quick half-hour soak only flavours the surface, but four to six hours- or overnight for chickencreates depth. Seafood, however, must be marinated briefly to avoid breaking down. Singh insists that marination should always be done in the refrigerator, never at room temperature, to preserve freshness and safety.
As the dish nears completion, vigilance becomes critical. Chicken, especially boneless cuts, can dry out quickly. Singh advises checking internal temperature-74°C for chickenrather than relying on colour alone. Fish and paneer demand even sharper attention, as they cook faster and can easily over-firm.
Finally, true tandoori flavour comes not from bright red hues but from visible blistering and char. These darkened spots come from intense heat, producing the complex roasted notes that define authentic tandoori cuisine.
In essence, the perfect tandoori dish balances patience, technique, and precision.
