Yet, celebrity chef and MasterChef India judge Kunal Kapur has shown how this humble ingredient can be elevated into a flavourful, nourishing dish when paired with moong dal. His Turai Moong Dal ki Sabzi is a quick, comforting recipe that blends the goodness of lentils with the freshness of vegetables, making it perfect for everyday meals.

The preparation begins with soaking moong dal for at least an hour to soften it. Ridge gourds are peeled, trimmed, and diced into medium-sized pieces, ensuring they are tender and not overly ripe. The cooking process starts by heating mustard oil in a kadai, imparting a distinct earthy aroma. Into the hot oil go hing, cumin, peppercorns, and dry red chillies, creating a robust tempering. Chopped ginger, green chillies, and onions are then sautéed until golden, followed by a mix of turmeric, Kashmiri red chilli powder, and coriander powder to build the masala base.

Next, tomatoes and salt are added, reducing to a rich gravy. The diced turai and soaked dal are stirred in with a splash of water and left to simmer under a lid until tender. The finishing touch comes with kasoorimethi, garam masala, and fresh coriander leaves, which infuse the dish with depth and fragrance. Served hot, garnished with coriander, this sabzi pairs beautifully with roti or steamed rice.

Beyond the recipe, Kunal Kapur’s culinary journey adds weight to his creations. Born in New Delhi in 1979, he trained in hotel management and began his career with the Taj Group of Hotels. His passion for food was nurtured at home by his father and grandfather, and over the years he has earned numerous accolades while opening restaurants across India and abroad. His approachable cooking style makes traditional dishes like turai sabzi appealing even to those who might otherwise overlook them.
